  • 1 kg Fresh Brinjals (Eggplants)

  • 12 Onions (medium-sized)

  • 1 tbsp Salt (adjust to taste)

  • 1 tsp Red Chilli Powder

  • 1 tsp Turmeric Powder

  • 1 tbsp Tamarind Pulp

  • 1 tbsp Ginger (grated or paste)

  • 6 tbsp Cooking Oil

  • Fresh Coriander Leaves (for garnish)

  • Roasted Peanuts (optional, for garnish)

👨‍🍳 Method – Step-by-Step Preparation:

  1. Wash & Chop
    Clean the brinjals thoroughly and cut them into quarters. Peel and finely slice the onions.

  2. Heat Oil
    Place a pan on the stove and pour in the oil. Let it heat on medium flame.

  3. Prepare the Masala Paste
    In a small mixer or using a mortar and pestle, make a coarse paste of ginger, a few onions, tamarind, turmeric, and coriander. This will be your base masala.

  4. Cook the Masala
    Add the paste to the hot oil and sauté for about 15 minutes, or until the oil separates and the mixture turns aromatic.

  5. Add Brinjals & Spices
    Toss in the chopped brinjals. Mix well. Add salt and red chilli powder. Roast the mixture for a few minutes.

  6. Simmer & Cook
    Add a splash of water if needed. Cover the pan and cook for 10–15 minutes on low heat, until the brinjals are soft and well-cooked.

  7. Garnish & Serve
    Once done, turn off the stove. Garnish the curry with fresh coriander leaves and a handful of crushed roasted peanuts for a nutty twist.
